The sensor market according to Market watch report published in May this year should reach a CAGR of 10.87% according to the report.

Some of the sensors will be used in the food processing industry that requires sensors to determine chemical composition, moisture, or protein content.

Some of them will be used to remove contaminants such as foreign materials.

Other will be used directly in the processing line to determine best way to cut, reduce waste and meet quality requirement as detailed in the EO July edition article “What to make of a round swede” an interview of Imaging and machine vision Europe.

In 2008 in a SPIE article Testing food safety with optical sensors by Špela Mojca Korent, Aleksandra Lobnik, and Gerhard J. Mohr researchers have focused in developing optical chemical sensors (OCS)

In the latest edition of RSC Issue 33,2020 the paper about “Nanotechnology-based approaches for food sensing and packaging applications” by Fatima Mustafa and Silvana Andreescu “summarizes recent studies on the use of nanomaterials in the development of: (1) (bio)sensing technologies for detection of nutritional and non-nutritional components, antioxidants, adulterants and toxicants, (2) methods to improve the barrier and mechanical properties of food packaging, and (3) active functional packaging. The environmental, health and safety implications of nanomaterials in the food sector, along with an overview of regulation and consumer perception is also provided”.

Photonics, photonics enabled technologies and sensors play a major role in the food processing and is forecasted to grow.
